What is Carska Pita
Carska Pita is a traditional Serbian savory pie made without phyllo dough. Instead, it uses a rich batter mixed with vegetables, cheese, and optional meats. The name loosely translates to "Imperial Pie", likely referring to its rich ingredients rather than any royal origin.
Ingredients
- 3 medium eggs or 5 small eggs
- 1 cup milk (240 ml / 8 fl oz)
- 1 cup all purpose flour (120 g / 4.2 oz)
- 1 cup corn flour (150 g / 5.3 oz)
- 1 cup milk (240 ml / 8 fl oz)
- 1 cup oil (240 ml / 8 fl oz, or 1/2 cup / 4 fl oz for a lighter version)
- 1 tbsp baking powder (15 g / 0.5 oz)
- 1 tsp salt (to taste)
- 9 to 10 oz feta cheese (250 to 300 g)
- 7 medium mushrooms
- 1 medium zucchini
- 1 medium red bell pepper
- sesame seeds (optional, to taste)
- 1 tbsp Greek yogurt
Optional Ingredients
- 2 to 4 pickles, diced
- 5 to 7 oz ham (150 to 200 g)
Prep Time and Servings
Prep time is about 30 minutes, with an additional 40 to 45 minutes baking time. This recipe serves about 6 people.
Instructions
1. Chop mushrooms, zucchini, pepper, pickles, and ham into small chunks. Do not cut too finely so they keep texture during baking.
2. In one bowl, mix flour, cornmeal, and baking powder.
3. In a larger bowl, whisk eggs and salt. Slightly warm the milk and add it. Add oil and mix well.
4. Gradually add dry ingredients into the wet mixture, stirring until smooth and lump free.
5. At this point you can Preheat your oven to 400°F (200°C).
6. Mash feta cheese with Greek yogurt in a separate bowl, then combine with the main mixture.
7. Add chopped vegetables, optional ham, and sesame seeds if desired. Mix thoroughly.
8. Grease a baking dish or use a silicone pan. Pour in the mixture evenly.
9. Bake on the middle rack for 40 to 45 minutes.
10. Check doneness with a knife or fork. If it comes out clean, it is ready.
11. Let it rest for 10 to 15 minutes covered with a clean cloth before serving.
Serving
Cut into cubes and serve warm. For best flavor, serve with plain yogurt or Greek yogurt.
